I am working my way through Pioneer Woman's cookbook and thought it was so odd she put a recipe in there for a piece of bread with a fried egg in the middle. Her cooking is always a bit more complicated than that.
But last night, as a last ditch attempt at supper (we're low on everything...) I decided to give it a go.
And oh my goodness, it was good. It wasn't just eggs and toast. It was like something different, with some egg baked into the toast, and the toast in ready position to sop up the runny egg. I don't even usually like sunnyside up eggs, but with enough salt and pepper I am a believer in this SUPER EASY and hey-that-felt-like-a-real-dinner recipe.
Here's her "recipe." I have a feeling I am really behind on this one. My guess is that many of you were raised on this, but egg in the hole is a new find for me, and I couldn't be more happy to have found another easy-peasy supper to add to the mix.

So funny! I had never had this treat either, until this summer. My son made it for me when I was visiting, but they call it egg in a hat because they take the center and cook it along with the egg and then, I suppose, in theory, you put it on top of the egg. Whatever you call it, yum!
ha ha! Yes, I was raised on this. Did you ever have toast in a bowl with warm milk and lots of sugar? That's what I was wanting last night. Man, i wish I could eat toast!
Nancy, I have heard it called toad in a hole too, and now egg in a hat. Maybe the fact that no one name ever stuck is why this sweet recipe never made it to my family. It's got a branding problem. :)
And Sarah. What in the world?!! Toast with milk and sugar?!! This has me just as intrigued as egg in the hole. Do you cut the toast at all? Or just cut it with your spoon as you eat? I'm so curious!
Yes! Egg in toast (that's what we called it)... YUM! Haven't had it in years, but perhaps I just may have to ask my mom to make it for me when we are home over Christmas... Thanks for the reminder! :)
We called them "one eyes" :).
Yes!! I heart Pioneer Woman and this is my favorite of her recipes. Mainly because I don't have to think about anything. I make it a few times a month -- super fast, easy and fun. Yay!! :)
John also loves this. I had never heard it until I met the man. He calls them cowboy hats, which is a good rival to toad in a hole. :)
Enjoy!
